Eggplant Rollups
Eggplant works well with any kind of sauce and can be turned into a hearty meal by adding a selection of meat. Eggplant is better served hot, although some people like their eggplant cold.
Eggplant Rollups
Ingredients you will need
1 eggplant 1 egg,
beaten 3 tablespoons of skim or whole milk
1 cup softened bread crumbs
3 tablespoons Parmesan cheese, grated
1 teaspoon crushed, dried basil leaf
1/2 teaspoon salt 1/8 teaspoon pepper
1/8 teaspoon garlic powder 1
1/4 pounds lean ground beef 1
16 ounce jar of homemade or store bought spaghetti sauce
Recipe Execution:
1. In a Dutch oven or large, deep fry pan, bring water to a boil
2. Cut eggplant into about 12 1/4-inch slices.
3. Boil the eggplant in salted water for 3 to 4 minutes. Drain well on paper towels.
4. In a mixing bowl, mix eggs, milk, bread crumbs, cheese, and seasonings
5. Add 1 pound of the ground beef and mix well.
6. Divide into 12 portions and place a portion of the beef mixture on each eggplant slice and roll up.
7. Place each eggplant roll in a large baking pan with the seam side down.
8. Brown the rest of the ground beef and drain.
9. Stir in the sauce and spoon the meat sauce atop the roll-ups.
10. Cover pan and bake at 350° for about 30 to 32 minutes. Remove the cover and bake an additional 30 to 40 minutes Serve the roll ups with spaghetti or with a tossed salad. Eggplant rolls serve 6.
